Recipe: Taco bowls

I love taco salad. Our local Mexican restaurant has a wonderful taco salad and I decided to replicate it.

There are a few variations. Our local grocery stores don’t carry tortilla shell bowls, so I had to improvise with tortilla chips. I also didn’t put refried beans in it, because my husband doesn’t eat them.

I started by browning some ground beef, and added a packet of taco seasoning and 2/3 cup of water.

Then, I chopped some lettuce and tomatoes and put them in a bowl.

I also grated some fresh cheddar and mozzarella. I chopped some fresh bellpepper and added it to the salad. I put the meat on top of the chips, along with the veggies and cheese.

I topped it off with “a dollup of Daisy” sour cream. (PLEASE don’t sue, folks at Daisy). Dig in and enjoy!!
