Recipe: Toaster Oven Quesadillas

Do you have a really picky eater in your home? Does your picky child love Mexican food? Do you want a cheap, quick, and easy meal?

If so, this is for YOU!

You will need tortillas, shredded cheese, coconut oil and a toaster oven.

Preheat your toaster oven to 350. If you don’t have a preheat option, just turn it on 350 for about 10 minutes.

Shred your cheese with a grater, or use storebought shredded mozzarella. Your choice. I like to pile mine high with cheese.

Then, add meat or veggies, or not. My kiddo just likes the cheese.

Then, simply fold that tortilla over, spray it with some oil and pop it in your toaster oven.

Bake it at 350 for ten minutes, remembering to flip it at five minutes.

Then, let it cool for a minute and enjoy! This picky eater totally approves.

You can even cut it up for your little eaters to enjoy.
