Recipes: Trim Healthy Mama Mufflets

We began our Trim Healthy Mama journey last year after having our youngest daughter. Since then, I’ve been trying to perfect some of the recipes. Recently, we made mufflets. The recipe below is based  on the mufflets recipe in the THM cookbook.

To make, you need eight large eggs, one cup of egg whites, a tablespoon of heavy cream, a cup of browned sausage and a cup and a half of cheese. You’ll also need cooking spray and some muffin tins.

First, brown your sausage. Later, you’ll need to mash it up with a fork.

Next, combine eggs, egg whites, cheese, heavy cream, salt and pepper in a bowl and mix it up.

Get a super cute little kid to help you cook. Actually, that’s optional, but way more fun.

Line the muffin cups with chopped sausage. Spoon 1/4 cup of the mixture on top of the sausage.

Bake the mufflets at 350 degrees for 25 to 30 minutes.

Mini muffin pans make toddler sized mufflets.

Which are a real crowd-pleaser.
